dBpowerAMP is my ripper of choice. It is very simple and the interface is easy enough to understand. The results are great and the program has support for a ton of different formats. Plus, it's free :thumb.

With linux it's a no brainer... cdparanoia for ripping and lame for encoding. Both are command line based. For front ends I use either mp3c (text terminal... ncurses) or gRip (GUI. gtk2... works in GNOME or XFCE desktops).

I've got a headless box I use for ripping/encoding. Remote login via ssh and use mp3c to rip CD's on it.

Good stuff! I believe lame is also available for Windows.
