Remember that emulators will only run on firmware 1.0, 1.5 and now 2.0. Anything else and yer SOL. The 2.0 hacks are very new, but supposedly work well now. Just make sure you don't upgrade to 2.01 or 2.5. If you did, you're stuck waiting for the next wave of hacks, which haven't even been hinted at yet.
I would go to pspupdates.com. That is the center of the PSP hacking universe!

Yeah, 2.5 is pretty bullet proof so far. You prob got a few months before there's a real emulator/eboot loader for it. The only option you really have is to try and return it, and get a unit with 2.0 or earlier on it. Even if you get one with 1.5, you can upgrade to 2.0 with the firmware on some games (GTA:LCS), so you can avoid the 2.01+ versions.
Sorry about the bad news :(

there SHOULd be a date mark on the box, or unit, when it was made...look at yours to find out..

I think everything that is one the shelves will have v1.52 or 2.00, but check in the pspupdates forums (they keep track of which serial numbers are what version).
As far as returning, you can try, and say that it freezes in the middle of games, like 30 min into them. No one wants to sit and watch you play for 30 minutes just to prove a point. Then again, it all depends on store policies. Generally around this time the return policies are more lax. The other option is to find something *coughbreakit* wrong with it, and try to just get an exchange. Of course you're playing with fire on this one though.
Talk to the store first, and find the tech guy.
Tell him theres a problem, and you would like an exchange...
The neetest and easyest thing to "FIX" that most person dont seem to UNDERATAND, is wire problems...Like the power wire having a small break in it.
Its something easy to test for, but it it dont WORK, they should just replace it.

The pspupdates site has a download section that you can find a whole emulator pack. It's always one of the top downloads. I would check that out first, and remove what you have. They added all the nice launcher graphics and latest versions.
Yeah Soda is such a little &^%&^% isn't he? Can't beat a star for teh stomach punch, though. :)

You can update to 2.0. There's a loader for it now. I don't think that any games require anything higher, yet.

They sum it up pretty well in this thread:
http://forums.qj.net/showthread.php?t=25723
If all you really want is to play emulators, 2.0 will be unintuitive, but work. If you want hardcore homebrew running and the ability to play ripped ISOs, 1.5 is better.
